Saltine Toffee Cookies
This is an easy to make but wonderfully delicious treat. We pack them in tins and give as gifts during the holidays. Use your favorite nuts to top the cookies.

35 servings

4 ounces saltine crackers
1 cup butter
1 cup dark brown sugar
2 cups semisweet chocolate chips
¾ cup chopped pecans

Step 1
Preheat oven to 400 degrees F (205 degrees C).

Step 2
Line cookie sheet with saltine crackers in single layer.

Step 3
In a saucepan combine the sugar and the butter. Bring to a boil and boil for 3 minutes. Immediately pour over saltines and spread to cover crackers completely.

Step 4
Bake at 400 degrees F (205 degrees C) for 5 to 6 minutes. Remove from oven and sprinkle chocolate chips over the top. Let sit for 5 minutes. Spread melted chocolate and top with chopped nuts. Cool completely and break into pieces.

150 calories; protein 1.3g; carbohydrates 15g; fat 10.2g; cholesterol 13.9mg; sodium 73.4mg.

I don't buy almond milk... substitute milk with a dash of almond extract?
Really don't care if there's flour or eggs in them. *shrugs* They're snackable and the fruits have vitamins and there's the oats.
Gluten free isn't a consideration since it's not a problem for me (or many other people). *sighs* It's just the next fad food catch phrase for most people. *grins* Guess they can't say 'nut free' since there's the almond milk which if you're allergic really is a big deal involving the ER in the immediate future after consumption.

Now let's talk about Colorado where marijuana is being added to all sorts of things you wouldn't think about; drinks, candy, cookies, gum, lip gloss, granola. Things people don't think about young children needing to be protected from but if they can't read or it's out of the packaging....

Haven't tried these yet. But during the summer when the A/C is going it seems counterproductive to heat the house with the oven. Microwaves are our friends and Crock pots and Bread makers.

Mocha Chocolate Chip No Bake Cookies

Ingredients:

2/3 cup quick oats (60g)
1/4 cup plus 3 tbsp oat flour (or make your own by blending oats in a food processor until they become powder. Measure after blending.) (60g)
2 tbsp cacao or cocoa powder (10g)
1/4 tsp salt
1/4 tsp baking soda
1/4 cup plus 1 tbsp xylitol or sugar (60g)
1 1/2 tsp instant coffee granules (I used decaf Mt. Hagen)
1/4 cup chocolate chips or mini chocolate chips
1/4 cup vegetable oil or coconut oil
2 tbsp water
1/2 tsp pure vanilla extract

Directions:

In a mixing bowl, combine all dry ingredients and stir very well.

In a cup, combine liquid ingredients, then pour wet into dry and stir until incorporated fully.

Transfer to a plastic bag and smush into a ball.

Now you can roll into smaller balls or fridge until a little firmer. (Note: if you use coconut oil, these cookies will harden when chilled, but they go back to being soft if left out.) You could also bake these if you wish. For gluten-free no bake cookies: be sure to use certified-gf oats and oat flour.

EDIT: I thought (and still think) I got 26 cookies when I made these, but some of the commenters have said they’re getting only 14-16. Other commenters are indeed getting 26 cookies, so I think it’s just that some people are making bigger cookies. If your batch yields 16: there will be 80 calories, 4.5g fat, 10g carbs, and 1g each protein and fiber (with 2 ww points) per cookie.
