Pear-Cinnamon Crisp with Vanilla Ice Cream

Ingredients
FILLING
4 whole (to 5) Large Pears (Bosc Work Well)
2/3 cups Sugar
1/4 teaspoon Salt

Topping
1-1/2 cup All-purpose Flour
1/3 cup Sugar
1/3 cup Firmly Packed Brown Sugar
1/2 teaspoon Cinnamon
1/2 cup Pecans, Very Finely Chopped
1 stick Butter, Melted

Preparation Instructions
1. Preheat oven to 350 degrees.
2. Peel, core, and dice pears.
3. Place into a bowl and stir together with 2/3 cup sugar and 1/4 teaspoon salt. Set aside.

4. In a separate bowl, combine flour, sugar, brown sugar, cinnamon, and pecans. Stir together.
5. Drizzle melted butter gradually, stirring with a fork as you go until all combined.

6. Pour pears into a baking dish; top with crumb topping.
7. Bake at 350 degrees for 30 minutes.
8. Place pan on top rack of oven for an additional 10 minutes, or until topping is golden brown.
Serve warm with vanilla ice cream.

Pear Ginger Crumble

Ingredients
Topping:
1/4 cup oat flour or whole wheat flour
2/3 cup old-fashioned oats
1/2 cup packed light brown sugar
1 teaspoon ground cinnamon
1/8 teaspoon salt
1/4 cup canola oil

Filling:
3 pounds firm but ripe pears, peeled, cored and cut into 1/4-inch slices
1 tablespoon fresh lemon juice
1 tablespoon freshly grated ginger
2 tablespoons sugar
1 1/2 tablespoons all-purpose flour
1 1/2 cups reduced-fat vanilla ice cream or frozen vanilla yogurt, optional

Directions
Preheat the oven to 375 degrees F.

1. For the topping: Combine the ingredients in a medium bowl and work together with a fork or with your fingertips until the ingredients are moistened.

2. For the filling: Combine the pears slices, lemon juice, and ginger in a large bowl. Add the sugar and flour and toss to blend.

3. Spray an 8 by 8-inch baking dish with cooking spray.
4. Transfer the pear mixture to the dish.
5. Sprinkle the topping over the pears.
6. Bake crumble until the pears are tender and the topping is golden brown, about 40 minutes.
7. Let cool for 10 minutes before serving.
8. Serve warm or at room temperature, with a scoop of ice cream, if desired.
