This was in a book about the State of New York. I liked that it gave metric measurements for those that do their recipes that way. And Okay my mind was thinking, 'food?' Felt like a very long week. My Librarian crawled back to work today or she'd have to have come back with a doctor's note stating she was well enough to come back. 2 days they allow you, after that you need a note from your mommy doctor. She stayed in her office coughing which had to be boring as all *shifty eyes* hell. It's a virus. don't let me get it. don't let me get it. don't let me get it. Last day of book circulation for the school year.
Chunky Apple Molasses Muffins
The Apple muffin became New York’s state muffin in 1987. New York ranks second in the country in growing apples. A deliciously sweet way to start the day.
Makes 12 muffins
Prep Time 10 min Cook Time 14 min Prep Time 10 min Cook Time 14 min
Ingredients
2 cups (480mL) all purpose flour
¼ cup (60 mL) sugar
1 Tbsp. (15 mL) baking powder
1 tsp. (5 mL) ground cinnamon
¼ tsp. (1.2mL) salt
1 cup Crunch Pak sweet or tart sliced apples, finely chopped (1 apple peeled, cored, and chopped)
½ cup (120 mL) milk
¼ cup (60mL) molasses
¼ cup (60 mL) vegetable oil
1 large egg
Instructions
1. Heat oven to 450°.
2. Combine flour, sugar, baking powder, cinnamon and salt in a large bowl. Add apples and stir to distribute evenly.
3. In a small bowl, beat milk, molasses, oil and egg in a small bowl. Stir into dry ingredients and mix until just blended.
4. Lightly grease 8 3-inch muffin pan cups and fill with batter.
5. Bake 5 minutes in preheated 450°F oven, then reduce heat to 350°F and bake 12 to 15 minutes longer or until centers of muffins spring back when gently pressed. Cool in pan 5 minutes.
