Butternut Squash Soup

1 Butternut Squash, pealed and cubed
2T extra virgin olive oil
1/2t salt
1/4t fresh ground black pepper
1 small onion, diced
2 sprigs fresh thyme
1 container vegetable broth
2t creme fresh
1/4t cinnamon

Put squash on baking sheet and drizzle with oil. Season with salt and pepper. Roast to caramelize the sugars in the squash.

In oil, saute onion with thyme sprigs til translucent.

In blender that has central area of lid taken off (use dish towel to cover- supposed to let out steam):
Blend together squash, onions that the sprig stems have been removed, broth, cinnamon and creme fresh.

If mixture has cooled, reheat.
Top with creme fresh if desired.
Eat.

Keep meaning to make butternut soup but always fall back on my favs leek&pot/tomato/mushroom soups

Is that 3 separate soups, leek & potato soup, tomato soup, mushroom soup?
Tomato soup... yum. I should look that up. Though I've found that condensed tomato soup + crushed tomatoes Italian style (basil etc.) makes a very easy, good, & tasty soup.
Campbell's use to make a tomato rice soup with parsley in it. It was good. Wonder if they still make that. hmmm.

Now if the internet would stop thinking that it's been raining in this area (hasn't here) then this will post the first time. Copy and posting coming up.

LOL I've 'made' that soup a time or two myself ;)
Not seen that in ages, never tried it.

Hearty Tomato Rice Soup

Campbell's Old Fashioned Tomato Rice Soup.

What You'll Need
1 small zucchini, coarsely chopped (about 1 1/4 cups)
1/2 teaspoon basil leaves, crushed
1/8 teaspoon garlic powder or 1 small clove garlic, minced
1 can (10 3/4 ounces) Campbell’s® Healthy Request® Condensed Tomato Soup
1 1/3 cups ( 1 soup can) water
1 teaspoon lemon juice
1/2 cup long grain white rice, prepared according to package directions without butter or salt (about 1 1/2 cups)
2 tablespoons Parmesan cheese

How to Make It
1 Spray a 2-quart saucepan with vegetable cooking spray. Heat over medium heat for 1 minute. Add the zucchini, basil and garlic and cook until the zucchini is tender-crisp.
2 Stir the soup, water, lemon juice and rice in the saucepan and heat through. Sprinkle with the cheese before serving.

I might try that without the rice - not a big fan of bits in my food ;)
