Crockpot Breakfast Casserole
Breakfast casserole in the crock pot! Cooks while you sleep!photo - Crockpot Breakfast Casserole


Ingredients:
1 bag 26 oz. frozen hash browns
12 eggs
1 cup milk
1 tablespoon ground mustard
1 16 oz. roll sausage
maple, sage or regular sausage.
Salt and pepper
16 oz. bag shredded cheddar cheese

Directions:
1. Spray crock pot and evenly spread hash browns at the bottom.
2. Crack 12 eggs in a large bowl.
3. Mix well (and slowly) using a whisk.
4. Add the milk.
5. Go ahead and sprinkle in the ground mustard. This might sound like a weird ingredient, but I've come to love (and use) this in most of my recipes.
6. Add plenty of salt....
...and lots of fresh pepper. Mix well and set aside.
7. Cook the sausage on high heat, drain and set aside.
8. Add sausage on top of hash browns.
9. Is this enough cheese? Maybe? Probably. Throw the whole big bag in there.
10. Mix it up well. Or good, depending on where you're from.
11. Pour the egg mixture over everything in the crock pot. Using a wood spoon, even everything out so it's spread evenly.
12. Turn the crock pot on low for 6-8 hours.

Some fun variations of this recipe. Before cooking (during prep) you can add:

chunks of sourdough bread
diced chiles
salsa
diced green onions

My first reaction was o.O but actually I've got a crock pot I never use and it would be a dream to have some form of hot food ready when I get up on a Monday, to often with the way my shifts work I -get up, drink coffee while skulking online, chase mutt around garden, wash, dress, go back to work- *sigh*

This has possibilities, and many calories LOL

Fancy omlette really -
....veggie sausage, waffles, peppers, cherry tomatoes, onion, cheese, egg

Calories. We sniff at the concept of calories.
This may explain why I have a few *shifty eyes* clothes that don't fit any longer.

This probably needs to be made over night and taken to school for one of those potluck breakfasts that happen periodically through the school year.

Hmm I'm wondering though - not being familar with crock pot cooking - what happens if you cut the recipe for one? does it take less cooking then?

hubby doesn't like eggs so this would be just for me, and then I want something that cooks for 7hrs being optimistic about getting that much sleep.

hmmm. Don't know. Use smaller crockpot? Make and save some for later and reheat in microwave. You may find that if it's in the refrigerator that it will disappear. Surprising what smelling something cook for a while will do for taste bud encouragement. The sausage, hash browns and cheese might disguise the eggs enough. You don't eat meat though hmmm... Add to the mix, sage and whatever else they flavor it with, they list spices, so maybe pepper?

No he seriously doesn't like them, no fooling him, he's tried omlette with me and I throw everything in mine.

I like quorn (meat substitute) sausages

If your sausages are in casings you might want to split the casing and brown it or whatever the recipe calls for... I didn't look all that closely because then I'd have to make this. I too have a crockpot and a person who doesn't eat eggs unless they're in something like pancakes or hmmmm ground beef and rice stir fry... hmmm the egg gets scrambled into little pieces and then stirred into the rest of the mixture. You hardly know it's there. Krag might eat it hmmm. Of course he'd soy sauce the thing to death. *sighs*

Hubby will eat pancakes, he has eaten egg-fried rice but only if theres not much egg and no other option ;)

No casings.
