Unbelievably yummy. Not your normal corn meal mush, this is sweet.
½ stick butter (4T)
2C milk
1/3 C corn meal
¼ - ½ C sugar
Melt butter
Add rest of ingredients.
Cook over medium heat, stirring it until it thickens ( about 5 – 10 min)

Substitutions: 1 cup plain cornmeal + 1 1/2 tsp baking powder + 1/2 tsp salt = 1 cup self-rising cornmeal; 1 1/4 cup cornmeal + 3/4 fat-free milk + 1 tbsp baking powder + 1/2 tsp salt + 1 egg, lightly beaten = self-rising cornmeal mix

Polenta

Ingredients
6 cups water
2 teaspoons salt
1 3/4 cups yellow cornmeal
3 tablespoons unsalted butter
Directions
Bring 6 cups of water to a boil in a heavy large saucepan. Add 2 teaspoons of salt. Gradually whisk in the cornmeal. Reduce the heat to low and cook until the mixture thickens and the cornmeal is tender, stirring often, about 15 minutes. Turn off the heat. Add the butter, and stir until melted.
