Homemade Yellow Mustard
Homemade yellow mustard is a DIY riff on the classic American condiment. The store-bought stuff can’t touch this. And it’s remarkably easy to make from mustard powder, vinegar, and a couple other pantry staples. Originally published July 24, 2014.–Renee Schettler Rossi

Makes 1 cup

INGREDIENTS
1 cup cold water
3/4 cup yellow dry mustard
3/4 teaspoon coarse sea salt or kosher salt
1/2 teaspoon ground turmeric
1 teaspoon garlic purée, or 1/8 teaspoon garlic powder
1/8 teaspoon paprika
1/2 cup white distilled vinegar

DIRECTIONS

1. Place the water, dry mustard, salt, turmeric, garlic, and paprika in a small nonreactive saucepan and whisk until smooth. Cook the mixture over medium-low to low heat, stirring often, until it bubbles down to a thick paste, 30 to 45 minutes.

☞ TESTER TIP: You’re definitely going to want to do this in a well-ventilated kitchen. As in windows flung open and exhaust fan on high. Trust us.

2. Whisk the vinegar into the mustard mixture and continue to cook until it’s thickened to the desired consistency—you know, the usual prepared mustard consistency—which can take anywhere from 7 to 15 minutes.

3. Let the mustard cool to room temperature. Transfer the mustard to an airtight container, cover, and refrigerate for up to 3 months. The mustard will be quite pungent the first few days or even weeks, but will mellow with time.

*WHAT YOU NEED TO KNOW ABOUT NONREACTIVE COOKWARE

The author of this classic condiment recipe kindly took the time to explain a term that’s tossed around quite a lot in recipes yet rarely defined: reactive cookware. In case you’ve always wondered, or could use a reminder, here’s what the author has to say on the topic: “Reactive cookware, meaning equipment made from aluminum or copper, can cause discoloration or impart a metallic, off taste in certain food. When a recipe suggests using nonreactive cookware, you can use glass, enamel, or stainless steel. If your pots and pans have an aluminum or copper core, that material is usually encased in a stainless steel shell, so they would be considered nonreactive as well.” There you have it.

WHAT IS YELLOW MUSTARD MADE FROM?
Yellow mustard is made by mixing yellow mustard powder with some sort of liquid, such as water, vinegar, wine or beer, along with salt and other spices. The simplest yellow mustard is made simply with ground mustard or dry mustard powder and water. They are mixed together to form a paste that you can flavor to your liking and adjust to your own personal tastes.

With this homemade yellow mustard recipe, you'll never need to buy overprocessed yellow mustard again. All you need is mustard powder, water, vinegar, and a few other optional ingredients.

Ingredients

¾ cup yellow mustard powder
1 cup water
½ cup distilled white vinegar

OPTIONAL SEASONINGS
1 teaspoon turmeric for color – use ¼ to ½ teaspoon for less pronounced yellow color
1 teaspoon garlic powder
½ teaspoon salt or to taste
¼ teaspoon cayenne powder or use paprika for a milder heat

Instructions

1. Whisk together the mustard powder, water, vinegar and seasonings together in a medium bowl. Make sure there are no lumps.

2. Pour into a wide pan or pot and bring to a quick boil. Reduce the heat and simmer on medium-low heat for 10-15 minutes, stirring occasionally, or until you achieve your desired thickness. Think of your typical “yellow mustard”. I’ve made this recipe many times and the thickening time can vary, usually depending on the amount of heat.

3. Remove from heat and cool. Store in a sealable container in the refrigerator. It will thicken as it cools.

Recipe Notes
This will last 3 months or longer. The flavors mellow a bit over time.
Makes about 1.5 cups.
