Homemade biscuits - Judy L

Homemade Biscuits
415° Oven

2 cups flour
2 T Baking Powder
1 t sugar
1/2 t salt
1 stick (1/2 cup) cold butter
1 cup buttermilk or white milk

Sift dry ingredients together.
I use a cheese grater or potato peeler to add cold butter into dry ingredients. Cut the butter into the dry ingredients so butter is all broken up and you get a pea like mix. Add buttermilk or white milk and using a fork, mix together. Once the dough starts to come together, cut the clumps with the fork as you go so you aren't stirring so much as incorporating the dry ingredients. There is still probably some dry ingredients loose in the bottom of the mixing bowl gather it together, turn it onto a floured surface and dump any loose flour mixture over top of dough. Roll it out to about 1/3"- 1/2" thick rectangle, trifold and repeat 3 times until you get a smooth dough. Leave it at 1/2" thick.
Cover for 20 minutes to rest.
Cut biscuits, round or square.
Biscuits cook best in a cast iron skillet or pan where they are placed close together and bake at 425° for 15-20 minutes or until golden brown on top. Butter the tops and cover with a warm damp towel until ready to serve.
