When combined with water it becomes highly elastic and taffy-like. Added to bread dough, it helps retain the gas and steam from baking and gives more volume to the baked bread. It can be especially helpful for baking breads made with coarse, whole grain flours and cereals.

1 tablespoon makes my homemade bread great
I add 1 tablespoon of gluten to my bread recipes that I make in the bread machine and the texture of the bread is amazing. My family loves my homemade bread and this product makes it even better. If you haven't experienced a little extra gluten in your breads yet wait until You give it a try. I have not tried many different brands, but I have been very pleased with this one.
Vegan "meat"
Without vital wheat gluten we would have no seitan (meat substitute, lacks lysine*). Add some water and some spices and you have a product (after steaming, roasting etc) that resembles meat.
