Sweet & Sour Cucumber Salad

3 Med. Cucumbers Peeled and Sliced 1/4"
1 Med. Onion sliced and separate into rings
3 Med. tomatoes cut into wedges
1/2 C. Vinegar
1/4 C. Sugar (use your choice of substitute)
1 C. water
1/4 C. oil
2 tsp.salt
1 tsp. ground pepper

Combine all in a large bowl..toss well to mix
Refrigerate for at least 2 hrs before serving

I saw this, so we tried it last night (with carrot cubes and red bell peppers because I didn't feel up to raw tomatoes yesterday), but I was reading reading what was in it, then going into the kitchen to add ingredients and got the quantities of sugar and vinegar reversed. So I have a little (a lot) of dressing left over.

My Grandmother used to make something this with just cukes and onions.
Carrots, if match sticked I could see. Green peppers yum.

The Filipino variation is simpler: cucumber, garlic, vinegar, salt, pepper (and an optional dash of sugar for a sweet taste). The cucumbers and salt sort of "swims" in the vinegar dressing. It is refreshing to have especially on a hot day and paired with the main dish of fried fish. Also good as an alternate use for a dip to your fried fish but we usually pair a dip made of calamansi juice and patis (aka fish sauce in English) YUM! :9
