GREEN CHILE SAUCE from Jude

The green chile 'sauce' is required.
and CHEESE.
It all went down in 15 minutes.
I was tempted to load up the 2nd rellano.
But no... It will wait.
Added rice to my plate and temperance.
GREEN CHILE SAUCE
(New Mexico green chile, required)
2 Tablespoons butter
1/3 cup of finely diced onion
1 Tablespoon minced garlic, or more
3/4 cup to 1 cup diced green chile (Heat/Spice is up to you)
1 cup water with 2-3 teaspoons of corn starch mixed in
1/2 Tablespoon cilantro (I used dried, crushed)
Melt butter over medium heat and saute onions until soft, add garlic and stir them in until you can smell them both.
Add the chile and keep sauteing them all until well blended.
Pour in the water/corn starch mixture and turn the heat up until a low simmer is reached.
Stir, stir, stir... and cook it down until the mixture is thick.
