1 1/2 cups packed light or dark brown sugar
1/2 cup granulated sugar
2 large eggs

2 tsp pure vanilla extract
3 cups quick cooking oats (not instant)
1 1/2 cups all purpose flour
1 tsp baking soda
1 tsp salt
1 tsp ground cinnamon
1/8 tsp ground clove or allspice
Filling:
1/2 cup butter softened
1/2 cup solid vegetable shortening
2 cups powdered sugar
2 Tbsp cream or half and half
1 tsp pure vanilla extract

1 7 oz jar marshmallow fluff

Freshly ground black pepper
1/2 teaspoon granulated sugar
8 cups low-sodium beef, chicken, or vegetable broth
3 tablespoons all-purpose flour
1/2 cup dry white wine (optional)
1/4 cup brandy (optional)
6 to 8 baguette slices, toasted
1 1/2 to 3 cups shredded Gruyère or Parmesan cheese (1/4 to 1/2 cup per serving)
Minced raw shallot or onion, for garnish
