Impossible Chili Pie

“This Impossible Chili Pie makes a great easy meal.” Impossibly good.


Ingredients

1 pound lean ground beef
1/2 cup onion, chopped
1/2 cup green pepper, chopped (Optional)
1 (15.5 ounce) can chili beans, drained
1 cup frozen corn
1 (4 ounce) can Old El Paso green chilis, drained
1/4 teaspoon black pepper
1/4 teaspoon salt
1 teaspoon minced garlic
1 teaspoon chili powder
Pinch of cayenne or few drops hot sauce
1/2 cup Pace chunky salsa
1 cup shredded cheese, divided
3/4 cup Bisquick
3 eggs
1 cup milk
Green pepper rings for garnish, Optional

Instructions

Brown ground beef, onion and green pepper in a skillet on top of the stove. Drain and return to pan.

Add drained chili beans, corn, green chilis, pepper, salt, garlic, chili powder, hot sauce and salsa.

Mix all ingredients together and heat for about 5 minutes.

Spray a 10 inch pie plate or can use a 9 x 9 square baking dish.

Pour ingredients into dish and sprinkle 1/2 cup of the shredded cheese on top.

Whisk together the bisquick, eggs and milk.

Pour over the cheese. Add the remaining cheese and green pepper rings.

Bake in preheated 400 degree oven for 25 to 30 minutes.

Hopping John - Black Eyed Pea Soup

Hoppin' John (Black Eye Soup)

“It has been a tradition to serve black-eyed peas on New Year’s Day in our family for many years. Serving this dish along with cabbage is supposed to bring you good luck and financial enrichment. This soup is also good in the summer and fall using fresh garden vegetables.”
I've eaten canned black eyed peas, with and without the jalapenos peppers(it's a type of canned black eyed peas), over cooked rice. It was good.


Ingredients

1 (16 oz bag) dried black-eyed peas
1 (16 oz can) chicken broth
1 ham hock or one cup diced, cooked ham
1 clove of garlic minced
1 cup diced celery
1 small onion, chopped
1 (16 oz) can diced tomatoes (optional)
1 (16 oz) can chopped okra (optional)
small jar Jalapeno diced peppers (optional)
Salt and Pepper to taste
Water

Instructions

Rinse peas, add to crockpot with enough water to cover all ingredients.

Add chicken broth, ham, garlic, celery and onion, salt and pepper. (If you just want black-eyed peas, stop here with recipe and cook on high for 4 hrs. or low for 7 hrs. or until peas and celery are cooked).

The tomatoes and okra can be added half way into the cooking for a recipe more like Hoppin John.

You could also make this in a pot on top of the stove. Just cut the cooking time until the black-eyed peas are tender.
