Shortbread Crust

"Simple and easy shortbread crust you'll love. Especially wonderful if your planning to make a peach pie."

Ingredients

1 cup butter
1/2 cup confectioners' sugar
2 cups all-purpose flour
1/4 teaspoon baking powder

Directions

Preheat oven to 350 degrees F (175 degrees C).

1. In a large bowl, cream butter and confectioners' sugar until light and fluffy.

2. Stir together flour and baking powder; blend into butter mixture.

3. Pat into a 9 inch pie plate.

4. Bake in preheated oven for 12 to 15 minutes, or until edges are lightly browned.

Company Cheesecake

Prep Time 25 min., Total Time 4hr. 40min.
Servings 16 servings

Have this Company Cheesecake at the ready for all your guests! This easy-to-make Company Cheesecake includes both cream cheese and cottage cheese.

Ingredients

1 cup graham cracker crumbs
3 Tbsp. sugar
3 Tbsp. butter or margarine, melted
(alternate option- shortcake crust)


2 pkg. (8 oz. each) Cream Cheese, softened
1 container (16 oz.) Cottage Cheese
1/2 cup sugar
1/4 cup flour
1 tsp. vanilla
3 eggs

Directions

Heat oven to 325°F.
Mix crumbs, 3 Tbsp. sugar and butter; press onto bottom of 9-inch springform pan. Bake 10 min. Increase oven temperature to 450°F.

Beat cream cheese and cottage cheese in large bowl with mixer until blended. Add 1/2 cup sugar, flour and vanilla; mix well. Add eggs, 1 at a time, mixing on low speed after each just until blended. Pour over crust.*

Bake 15 min. Reduce oven temperature to 250°F; continue baking 1 hour. Run knife around rim of pan to loosen cake; cool before removing rim. Cool completely. Refrigerate 4 hours.

*Use Blender. Start with some of the cottage cheese. Add some of cream cheese. Add dry ingredients, more cottage cheese. Add cream cheese. When blender mixture gets too thick add one egg at a time through the blending time and vanilla.
