Cheesy Green Chile Rice Casserole

Easy to make, delicious and inexpensive. Make this casserole a meal as it is but to make it more hearty, add a layer of cooked, diced chicken to the dish. Any leftover chicken will work but especially rotisserie chicken. Delicious, creamy and cheesy elements.

Prep Time 5 minutes Cook Time 30 minutes Servings 8 Calories 322kcal
Ingredients
2 cups sour cream
4 oz diced fire roasted green chiles
3 cups cooked rice
8 oz Pepper Jack cheese shredded
2 oz cheddar cheese shredded
garnish with cilantro, parsley or jalapenos optional
Instructions
1. Preheat oven to 350F.
2. Lightly spray an 8-in square casserole dish with cooking spray,
3. Combine sour cream and diced green chiles in a small bowl. Set aside.
4. Spoon 1 cup of rice into the bottom of the casserole dish.
5. Spread one-third of the sour cream mixture on top of the rice.
6. Top with one-third of the shredded pepper jack cheese.
7. Repeat layers two more times.
8. Cover with aluminum foil and bake for 20 minutes. Uncover and bake for an additional 10 minutes.
9. Serve immediately.
