These traditional ball-shaped, bourbon-flavored pecan cookies end up on a dessert bar or in a gift box.

Prep Time 28 Mins Yield 4 dozen

Ingredients

1 (12-oz.) package vanilla wafers, finely crushed
1 cup chopped pecans or walnuts
3/4 cup powdered sugar
2 tablespoons cocoa
2 1/2 tablespoons light corn syrup
1/2 cup bourbon
Powdered sugar*

Directions

Step 1
Combine vanilla wafers, pecans, powdered sugar, and cocoa in a large bowl; stir well.

Step 2
Combine corn syrup and bourbon, stirring well. Pour bourbon mixture over wafer mixture; stir until blended. Shape into 1-inch balls; roll in additional powdered sugar. Store in an airtight container up to 2 weeks.

A basic recipe for bourbon balls. The bourbon balls can be rolled in powdered sugar, granulated sugar, or finely chopped pecans.

Makes about 3 dozen delectable bourbon balls.

Ingredients

1 cup fine vanilla wafer crumbs
1 cup finely chopped pecans
1 cup confectioners' sugar
2 tablespoons unsweetened cocoa powder
1/4 cup bourbon
2 tablespoons light corn syrup

Directions

1. Thoroughly combine 1 crushed vanilla wafer crumbs, chopped pecans, 1 cup confectioners' sugar, and the cocoa.

2. In a separate bowl, blend the bourbon and corn syrup.

3. Stir the bourbon mixture into the dry mixture; blend well.

4. Cover and chill for at least a few hours.

5. Sift about 1/2 to 1 cup of confectioners' sugar into a wide, shallow bowl.

6. Shape small bits of the dough into balls and roll them in the confectioners' sugar.

7. Store in the refrigerator in tightly covered containers for up to 2 weeks.

8. Make these a few days in advance for best flavor, and roll in confectioners' sugar again before serving, if desired.

9. The bourbon balls can also be frozen for longer storage.


Variations

Replace the bourbon with a good quality rum to make delicious rum balls.

Make the bourbon balls with toasted pecans for a nuttier flavor. Spread pecan halves out in a dry skillet and cook over medium heat, stirring constantly. When the pecans are lightly browned and smell toasty, remove them to a plate to cool completely. Chop them finely and use in the recipe.

Ingredients

1/4 cup honey
1 package (6 ounces) semisweet chocolate chips (1 cup)
2 1/2 cups finely crushed vanilla wafer cookies (about 55 cookies)
2 cups ground walnuts
1/3 cup port, sweet red wine or apple juice
About 1/2 cup coarse sugar crystals (decorating sugar)

Directions

1. Heat honey and chocolate chips in 3-quart saucepan over low heat, stirring constantly, until chocolate is melted; remove from heat. Stir in crushed cookies, walnuts and port. Shape into 1-inch balls; roll in sugar crystals.

2. Store in tightly covered container. Let stand several days to blend flavors. Flavor improves with age up to 4 weeks.

Options
Omit chocolate chips and do not heat honey. Substitute dry white wine for the port. Mix all ingredients except sugar. Shape into 1-inch balls; roll in sugar. Continue as directed.

Just substitute rum or bourbon for the port. Prepare as directed.

To give as a gift, wrap candies individually in colorful plastic wrap or cellophane, and tie with metallic ribbons. Fill a wine glass with candies, and be sure to include the candy recipe with your gift.
