Homemade Apple Pie Filling

Use this filling instead of canned. Please note – due to the cornstarch, it is not recommended to can this recipe.

Serves: Enough for one 9-inch pie
Ingredients
1 cup water
1 Tbsp apple juice, apple cider, or lemon juice
1 cup sugar
1/4 tsp ground cinnamon
1/4 tsp ground nutmeg
1/4 tsp ground clove
1/4 cup cornstarch
1/4 tsp vanilla
3 cups apples, cored, peeled, and chopped (tart – Honey Crisp or Granny Smith)
Directions
In a large saucepan, combine water, juice, sugar, cinnamon, nutmeg, clove, and cornstarch. Stir over medium heat until thickened and bubbly. Cook for 2 minutes, constantly stirring. Remove from heat and stir in vanilla and apples. Cool to room temperature then use right away or store in the refrigerator*.
Notes
*If you do store the filling in the refrigerator, it may separate. Reheat everything back up in a saucepan until combined and thickened again.
The apples in this filling are crunchy. You probably don’t want to eat it straight from the pan (although you could if you wanted that crisp, raw texture). You’ll have to bake the filling to soften the apples. Since its ideal purpose is pie, it isn’t a problem. Just fill a 9-inch pie crust with this filling and bake.
I know that a microwaved apple softens hmmm maybe………
Food fact: substituting Flour in a recipe for Cornstarch as a thickening, double the amount of Flour .

Ingredients
1/2 c. butter
1/4 c. sugar
2 c. graham cracker crumbs
5 c. thinly sliced apples, peeled (4-6 apples)
1/2 c. sugar
1 tsp. cinnamon
Directions
Place butter in large glass mixing bowl. Melt in microwave oven about 1
minute on high power. Add sugar and graham cracker crumbs and mix
well. Press 1/2 of mixture firmly and evenly to line a 9 inch pie plate. Place
sliced apples in crumb lined pie plate and sprinkle with sugar and
cinnamon mixture.
Use remaining cracker crumbs to make a top crust, leaving center open.
Mold crumbs firmly into attractive peaked ridge at edges so slices of
finished pie will hold shape. Cover pie with waxed paper. Microwave 10-12
minutes on high power.
