Cornflake Cookies version 1
yield 4 dozen

Note, the number of cookies you get will vary - depending on how big you roll the balls."

Ingredients
1 cup butter
1 cup vegetable oil
1 cup white sugar
1 cup brown sugar
1 egg
1 cup crushed corn flakes
1 cup chopped nuts ( I use walnuts or pecans)
1 cup quick-cooking oatmeal
4 cups flour, decrease to 3 1/2 cups for a chewier cookie
1 tablespoon baking soda
1/2 teaspoon salt
2 teaspoons vanilla extract

Directions
Preheat oven to 325.
Cream butter, sugars, vanilla and egg.
Add oil.
Mix in dry ingredients.
Form dough into walnut sized balls.
Place on cookie sheet and flatten with a fork dipped in water.
Bake for 10- 12 minutes.
Cool on pan for a minute or two, then transfer to a rack to cook.

version 2
* 2 egg whites (beat foamy)
* 1/8 teaspoon cream of tartar
* 1/8 tsp soda
* 1/2 teaspoon vanilla
* 1/3 cup sugar (beat into first 4 ingredients until stiff)
* 1/2 cup flaked coconut
* 1 1/2 cups corn flakes

Ingredient quantities probably reduced to further simplify the task for cooking class.
These were dropped onto greased baking sheet and introduced to 350 degree oven. Today I might find that oven temperature to be a bit high so, if you decide to try it, you might want to lower it to about 325 and use parchment paper instead of a greased baking sheet..

version 3
1 c. sugar

Stir in cornflakes; mix well and add nuts.
Drop by teaspoons about 2 inches apart (cookies will spread out). Bake 12-15 minutes at 350 degrees.

In NZ we put cocoa in these and call them Afghan biscuits. They're often iced with chocolate and walnuts. I don't now why they're called Afghan's but I think it possibly has more to do with crocheted blankets than the country.

Cocoa hmmmm.
Much too hot to bake indoors without driving up the electric bill to cool off the house. These recipes are for later.

Am already planning how to make some of the other recipes in the microwave oven or on an outside grill.

Just like my Special K cookies, I was actually going to share the recipe but someone got there first with this LOL

Made a nice batch, oatmeal and weetabix, and as I had them spare Blackberries.

Recipe is different every time, these ones look more like little rock cakes than cookies and could be eaten with cheese or dribbled with icing.

Took a piccy on hubby's phone I'll get him to email it to me and share it :D

Basic Recipe
100g Butter
1/2 cup Sugar
1 cup S.R. Flour
1 Large Egg
1 TbSp Vanilla Essence
A splash of Milk

Cereal
Great for using the crumbs at the bottom of the box up!
About two cups of Special K (any variety)/Cornflakes, nice with a fruited muesli...
This version I used a cup of oats and crushed weetabix

The cereal used varies the texture, flakes will give you a nice cookie.
Using oats makes them denser and more of a rock-cake - which is nice served warm with a scrape of butter and maybe even cheese.

Depending what you use you may need to vary the mix, so add a tad more butter/milk... until the texture looks right.

Fruit
A handful of any dried fruit; I like mine with dried Apricots or Dates or Cranberries.
A little fresh fruit also works; Banana or Apple (with a sprinkle of cinnamon)
This version I threw in my spare Blackberries, hence the purpley hue to them

Other options
No reason you can't add a little coconut or cocoa though I've not tried that yet :)

Method
- Pre-heat oven 180c
- Cream butter and sugar adding the Vanilla
- Add beaten egg, then sift in flour
- Add Milk, choice of cereal and fruit and stir mix.
- Spoon onto greaseproof paper/cookie sheet and bake for 15/20mins
- Cool on a rack
- Enjoy ^__^
