Creamy Lemon Squares

Creamy Lemon Squares

6 servings

Ingredients:
for the crust
4 tablespoons (1/2 stick) unsalted butter, melted and cooled, plus more for pan
1-1/2 cup (about 24 squares) graham-cracker crumbs
1/4 cup sugar

another crust option
1 C flour
1/4 C sugar
8 T unsalted butter, melted
pinch of salt
1 t vanilla extract

Filling
3 eggs
3 T Lemon juice
1 C sugar
4 T cornstarch
3 T unsalted butter, melted
1 pinch salt
1 piece lemon

Mix crust ingredients together until compact and press into foil lined rectangular pan.
Bake 350* for 20 min.

Blend together juice and deseeded pulp. You may want to sieve the lemon so it's in very small pieces.
Mix in sugar.
Add remaining ingredients and mix well.
Pour into crust and bake 300* for30 min. until filling has a pudding like consistency
Remove from oven and cool completely.
Sprinkle with powder sugar.
Cut into bars/squares.
